EASY (AND HEALTHY) BANANA BREAD
I have always loved baking and I have always wanted to be able to share some of my favorite recipes here on the blog with you! To be honest, this was one of my New Year's resolutions for 2017, so I finally decided to start this new venture with an all time favorite recipe!
Banana bread it is! This bread has been adored by everyone I’ve ever shared it with! Also. while it’s baking, it makes your kitchen smell bananas and cinnamon!
Its basic ingredients are oats, bananas, Greek yogurt and plenty of spices to give it flavor. I also added some cranberries to add a bit of a fun flavor twist!
This recipe is not overly sweet because BUT feel free to add a little sugar to the mix if you want. BUT those sweet little bananas will add a little boost of sweetness.
EASY BANANA BREAD
Servings: 8 to10

150 gr ground oats
3 tablespoons flax seeds, whole or ground
2 ripe bananas
1 teaspoon baking powder
8-10 crushed or ground almonds
10-15 cranberries
2 eggs
2 large tablespoons Greek honey, or maple syrup
50 gr Greek yogurt
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon, optional
1/2 cup chocolate chips, optional
Preheat oven to 180°C (350°F). Line the bottom and long sides of a loaf pan (9x5) with a sling of parchment paper. In the bottom of a large bowl, mash bananas with a potato masher or the back of a wooden spoon until virtually smooth but a few tiny lumps remain.Combine dry ingredients in a mixing bowl. Beat eggs until fluffy. Pour wet into dry, add the bananas, and stir to form a batter. Smooth into the prepared pan. Press chocolate chips into the top. Bake for 30 minutes; then without opening the oven door turn off heat and let sit in the closed oven for 10 more minutes. Let cool in pan on rack for 10 to 15 minutes, then run a knife around cake and transfer to cooling rack. Let cool completely.
This is a simple recipe, and you can adjust it a little to suit your tastes (for example, you can use a little more or less honey, or even add sugar). If you don’t have cranberries on hand, any other dried fruit will work perfectly!
